Fresh Okra (Bhindi): 350g (12 oz), rinsed, thoroughly dried, and sliced into 1/2-inch pieces

Oil: 2 tablespoons (mustard oil or vegetable oil)

Cumin Seeds: 1 teaspoon

Onion: 1 medium, finely chopped

Ginger-Garlic Paste: 1 teaspoon

Tomatoes: 2 medium, finely chopped

Green Chilies: 1 to 2, slit lengthwise (adjust to taste)

Turmeric Powder: 1/2 teaspoon

Red Chili Powder: 1 teaspoon (or Kashmiri chili powder for milder heat)

Coriander Powder: 1.5 teaspoons

Garam Masala: 1/2 teaspoon

Dry Mango Powder (Amchur): 1/2 teaspoon (or 1 teaspoon lemon juice)

Salt: To taste (approx. 1 teaspoon)

Fresh Coriander: 2 tablespoons, chopped (for garnish)
Instructions

Prep the Okra: Wash the okra thoroughly under cold running water. Crucial step: Pat every piece dry with a kitchen towel or let them air dry completely before cutting. Slice off the stem and tip ends, then cut into 1/2-inch rounds.

Sauté the Okra: Heat 1 tablespoon of oil in a wide, heavy-bottomed pan or skillet over medium-high heat. Add the sliced okra and sauté for 6–8 minutes until slightly browned and no longer slimy. Remove the cooked okra from the pan and set aside.

Temper Spices & Onions: Heat the remaining 1 tablespoon of oil in the same pan. Add the cumin seeds and allow them to crackle. Add the chopped onions and green chilies. Fry for 4–5 minutes until the onions turn soft and light translucent pink.

Add Ginger-Garlic & Tomatoes: Stir in the ginger-garlic paste and cook for 1 minute until the raw smell disappears. Add the chopped tomatoes and cook for 3–4 minutes until they turn soft and mashable.

Spice Mixture: Turn the heat to low. Stir in the turmeric, red chili powder, coriander powder, and salt. Mix well and cook the masala for 1–2 minutes until the oil starts to separate from the edges.

Combine Okra & Finish: Add the sautéed okra back into the pan with the spice mix. Gently toss everything together so the masala coats the okra evenly. Cover with a lid and cook on low heat for 4–5 minutes until the bhindi is fully tender.

Final Touch: Uncover, sprinkle over the garam masala and dry mango powder (amchur), and toss well on medium heat for 1 minute. Garnish with chopped fresh coriander leaves.

Prevent Sliminess: Ensure the okra is 100% dry before cutting. Never add water to the pan while cooking bhindi.

Amchur Substitute: If dry mango powder is unavailable, turn off the flame and drizzle fresh lemon juice right before serving.
