Ingredients

For the Spiced Potatoes (Aloo Fry):

  • 1 medium potato, washed, peeled, and cut into small $\frac{1}{4}$-inch cubes

  • 1 tablespoon oil (vegetable, mustard, or ghee)

  • $\frac{1}{2}$ teaspoon cumin seeds

  • $\frac{1}{4}$ teaspoon turmeric powder

  • $\frac{1}{2}$ teaspoon red chilli powder or Kashmiri red chilli powder

  • $\frac{1}{2}$ teaspoon garam masala

  • $\frac{1}{2}$ teaspoon chaat masala (optional, for extra tanginess)

  • Salt to taste

For the Omelette:

  • 3 large eggs

  • 1 small red onion, finely chopped

  • 1–2 green chillies, finely chopped (adjust to taste)

  • 2 tablespoons fresh cilantro (coriander), finely chopped

  • 1 tablespoon butter or oil for cooking

  • Salt and freshly ground black pepper to taste

Instructions

  1. Crisp the Potatoes:

    Heat 1 tablespoon of oil in a non-stick skillet over medium heat. Add the cumin seeds and let them sizzle for 10 seconds. Add the diced potatoes and a pinch of salt. Cover and cook on medium-low heat for 6–8 minutes, stirring occasionally, until the potatoes are tender inside and golden brown on the outside.

  2. Season the Potatoes:

    Uncover the skillet and add the turmeric, red chilli powder, garam masala, and chaat masala. Toss well so the spices coat the potatoes evenly. Fry uncovered for another 1–2 minutes until fragrant and crisp. Transfer the potatoes to a bowl and set aside.

  3. Prepare the Egg Mixture:

    In a bowl, whisk the eggs until light and frothy. Stir in the chopped red onion, green chillies, cilantro, salt, and black pepper.

  4. Combine or Layer:

    Option A (Mixed): Gently fold the fried spiced potatoes directly into the egg mixture.

    Option B (Layered): Pour the egg mixture into the pan first, then scatter the crispy potatoes evenly over the top as the bottom sets.

  5. Cook the Omelette:

    Melt 1 tablespoon of butter or oil in the skillet over medium-low heat. Pour in the egg and potato mixture, spreading it out evenly. Cook for 3–4 minutes until the edges are set and the bottom turns golden.

  6. Flip & Serve:

    Gently slide a spatula underneath and flip the omelette to cook the other side for another 1–2 minutes, or until the eggs are fully set. Transfer to a plate, garnish with extra fresh cilantro, and serve hot alongside toasted bread, pav, or warm parathas.
