Ingredients
For the Soft Butter Rotis:

3 cups cake flour (plus extra for rolling)

1 tsp salt

2 tbsp cooking oil

1 cup boiling water

½ cup (100g) butter or ghee, melted (for layering and frying)
For the Savory Mince Curry:

2 tbsp vegetable oil
-
500g beef or lamb mince

1 large onion, finely diced
-
3 cloves garlic, minced
-
1 tbsp fresh ginger, finely grated
-
2 tbsp medium curry powder or Cape Malay masala
-
1 tsp ground cumin
-
1 tsp ground coriander
-
½ tsp turmeric powder
-
1 medium potato, peeled and cut into tiny cubes

1 tin (400g) chopped tomatoes
-
½ cup beef stock or water
-
½ cup frozen peas
-
1 tbsp chutney or apricot jam (optional, for a hint of sweetness)

Salt and black pepper to taste

Fresh coriander for garnish
Instructions
Step 1: Prepare the Roti Dough

Mix the dough: In a large bowl, mix the flour and salt. Add the oil and pour in the boiling water. Stir with a wooden spoon until a rough dough forms.

Knead & rest: Once cool enough to touch, knead the dough for 4–5 minutes until smooth. Cover with a towel and let it rest for 15 minutes.

Layer with butter: Divide the dough into 6 equal balls. Roll each ball out into a circle, brush generously with melted butter, and roll it up tightly into a rope. Coil the rope into a spiral (like a cinnamon roll). Cover and rest for another 10 minutes.
Step 2: Cook the Curry Mince

Braise the aromatics: Heat the oil in a medium pot over medium heat. Add the diced onion and fry until golden brown and soft. Stir in the minced garlic and grated ginger for 1 minute.

Toast spices: Lower the heat, add the curry powder, cumin, coriander, and turmeric, and fry for 30 seconds until aromatic.

Brown the meat: Add the mince, using a spoon to break up any lumps. Cook until browned throughout.

Simmer: Add the chopped tomatoes, cubed potatoes, stock, and chutney (if using). Cover, turn the heat to low, and let it simmer gently for 20–25 minutes until the potatoes are fork-tender.

Finish: Stir in the frozen peas during the last 5 minutes. Season with salt and pepper. The sauce should be thick rather than watery so it wraps easily inside the rotis.
Step 3: Fry the Rotis

Roll out: On a floured surface, flatten each buttered spiral and roll it out into a thin circle.

Pan-fry: Heat a dry skillet or pan over medium-high heat. Place a roti in the dry pan. Cook for 1–2 minutes until bubbles appear, flip, brush with a little melted butter, and cook until golden brown spots form on both sides.

Clap the roti: Immediately after taking each roti out of the pan, lightly “clap” or scrunch it between your hands to break up the layers and make it flaky.
