Kulfi is a traditional South Asian frozen dessert loved for its rich, dense texture and aromatic flavors. Unlike modern ice cream, which is churned with air, kulfi is made by slowly simmering whole milk until thick and caramelized. This no-churn, classic recipe brings authentic street-food flavor straight to your kitchen!

Ingredients

4 cups (1 liter) Full-fat whole milk

1/2 cup Heavy whipping cream (optional, for extra richness)

1/2 cup Sweetened condensed milk (or 1/3 cup sugar)

1/4 tsp Green cardamom powder (freshly ground)

2 tbsp Pistachios, finely chopped
-
2 tbsp Almonds, finely chopped

A generous pinch Saffron strands (soaked in 1 tbsp warm milk)
Instructions

Simmer the Milk:
In a heavy-bottomed pan, bring the whole milk and heavy cream to a gentle boil over medium heat. Stir continuously to prevent the milk from burning at the bottom.

Reduce & Thicken:
Lower the heat to low-medium and let the milk simmer. Stir every few minutes, scraping down the sides of the pan to incorporate the milk solids back into the mixture. Continue until the milk reduces to about half its original volume (approx. 25–30 minutes).

Add Flavors & Sweetener:
Stir in the condensed milk, saffron liquid, cardamom powder, and half of the chopped nuts. Simmer for another 5–10 minutes until thick and custard-like.

Cool Down:
Remove the pan from the heat and allow the mixture to cool completely to room temperature.

Pour & Freeze:
Pour the cooled kulfi mixture into kulfi molds, small metal cups, or popsicle molds. Top with the remaining chopped pistachios and almonds. Cover tightly with foil and insert wooden popsicle sticks into the center. Freeze for at least 6 to 8 hours (preferably overnight) until set solid.

Unmold & Serve:
To serve, run the bottom of the molds under warm water for a few seconds to loosen, then pull gently on the stick. Garnish with extra saffron or nuts and serve immediately!
