1 tbsp ginger-garlic paste

-
2 tbsp medium-hot curry masala or chilli powder
-
1 tbsp coriander powder
-

-
4 medium tomatoes, finely grated or blended smooth
-
2 tbsp tamarind pulp (dissolved in ¼ cup warm water and strained)
-
1 tsp sugar or palm sugar
-
1 tsp salt (adjust to taste)
Finishing Touches
-
1 cup warm water (or coconut milk for a richer, creamier gravy)
-
½ tsp garam masala or ground black pepper
-
Fresh cilantro (coriander), finely chopped for garnish
Instructions
-
Prepare the Crab:
Ensure the crab pieces are thoroughly washed and drained. Use the back of a heavy knife or nutcracker to gently crack the large claws. This lets the spice gravy penetrate deep into the crab meat.
-
Sauté the Whole Spices & Aromatics:
Heat the oil in a wide, heavy-based pot or kadai over medium heat. Add the mustard seeds, fennel seeds, and cinnamon stick. Allow them to sizzle for a few seconds until fragrant. Add the diced onions, green chillies, and curry leaves. Sauté for 6–8 minutes until the onions turn golden brown.
-
Build the Spice Base:
Reduce the heat to low. Stir in the ginger-garlic paste and cook for 1 minute until the raw aroma disappears. Add the turmeric powder, curry masala, coriander powder, and cumin powder. Stir constantly for 30 seconds to roast the spices without burning them.
-
Simmer the Sauce:
Add the grated tomatoes, tamarind liquid, sugar, and salt. Increase the heat to medium and cook for 5–7 minutes, stirring occasionally, until the tomatoes soften, thicken, and oil begins to separate around the edges of the pan.
-
Cook the Crab:
Pour in 1 cup of warm water (or coconut milk) and bring the gravy to a gentle boil. Add the prepared crab pieces into the pot, tossing gently to coat every piece in the thick masala gravy.
-
Cover & Simmer:
Cover the pot with a tight-fitting lid and reduce the heat to low. Allow the crab to simmer for 12–15 minutes (or until the shells turn bright orange/red and the meat is fully cooked through).
-
Garnish & Serve:
Remove the lid, sprinkle over the garam masala (or fresh ground black pepper), and gently stir. Simmer uncovered for 2 minutes to thicken the gravy to your desired consistency. Turn off the heat and garnish with chopped fresh coriander.
Serving Suggestion: Serve piping hot alongside steamed basmati rice, roti, or warm crusty bread to soak up the gravy.
