Classic Garlic and Olive Oil Pasta (Spaghetti Aglio e Olio)
Classic Garlic and Olive Oil Pasta (Spaghetti Aglio e Olio)

If you are looking for a showstopping meal that takes under 15 minutes and uses basic pantry staples, classic Spaghetti Aglio e Olio is the ultimate answer. Originating from Naples, Italy, this rustic dish relies on high-quality extra virgin olive oil, fragrant garlic, and a touch of chili flake warmth to create an silky sauce that coats every strand of pasta.

Prep & Cook Time
Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes

Servings: 4

Ingredients
350g (12 oz) Spaghetti (or spaghettoni)

1/2 cup (120 ml) Good-quality Extra Virgin Olive Oil

6 to 8 cloves Fresh garlic, thinly sliced

1 tsp Red pepper flakes (chili flakes)

1/2 cup Fresh Italian flat-leaf parsley, finely chopped

Salt for pasta water (approx. 1 tbsp)

1/2 cup Freshly grated Parmigiano-Reggiano or Pecorino Romano (optional)

Fresh lemon juice (optional, a small squeeze to balance richness)

Step-by-Step Method
Boil the Pasta
Bring a large pot of heavily salted water to a rolling boil. Add the spaghetti and cook until 1 to 2 minutes shy of al dente (it will finish cooking directly in the garlic oil).

Gently Infuse the Garlic
While the pasta cooks, add the extra virgin olive oil and thin garlic slices to a large skillet over cold/low heat. Gently warm the oil so the garlic slowly sizzles without scorching. Cook for about 3–5 minutes until the garlic turns light golden (do not let it turn dark brown, or it will taste bitter).

Add the Heat
Stir in the red pepper flakes and remove the skillet from the heat for 30 seconds to infuse without burning the chili.

Emulsify the Sauce
Ladle out 1 cup of starchy pasta cooking water right before draining the pasta. Pour about 1/2 cup of this pasta water into the skillet with the oil and garlic. The starch will bind with the oil to form a glossy, emulsified sauce.

Toss and Finish
Transfer the drained pasta directly into the skillet over medium heat. Toss constantly for 1–2 minutes until the pasta absorbs the sauce and reaches perfect al dente texture. Add more pasta water a tablespoon at a time if it looks dry.

Garnish & Serve
Remove from heat, stir in the freshly chopped parsley, and toss well. Serve immediately topped with optional grated cheese or a tiny squeeze of fresh lemon juice.

Pro Blogger Tips for Perfect Results
Slice, Don’t Mince: Thinly slicing the garlic allows it to toast evenly without tiny pieces burning too quickly.

Save the Starch: The pasta water is your key emulsifier—never skip adding it, as it transforms plain oil into a silky sauce.
