Prep & Cook Time

  • Prep Time: 20 minutes

  • Cook Time: 2 hours 45 minutes

  • Resting Time: 10 minutes

  • Total Time: 3 hours 15 minutes

  • Servings: 4

Ingredients

For the Smoky Dry Rub:

  • 2 racks baby back pork ribs (about 2 kg total), membrane removed

  • 2 tbsp dark brown sugar

  • 1 ½ tbsp smoked paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tsp cayenne pepper (adjust to preferred heat level)

  • 1 tsp black pepper

  • 1 ½ tsp coarse sea salt

  • 2 tbsp olive oil

For the “Sweet Fire” Glaze:

  • ½ cup liquid honey

  • ¼ cup sriracha or hot chili paste

  • ⅓ cup tomato ketchup

  • 2 tbsp soy sauce

  • 2 tbsp apple cider vinegar

  • 1 tbsp Worcestershire sauce

  • 2 cloves garlic, finely minced

  • 1 tsp fresh ginger, grated

  • 1 tbsp unsalted butter

Instructions

1. Prep the Ribs

  1. Preheat your oven to 150°C (300°F). Line a large rimmed baking sheet with aluminum foil.

  2. Pat the racks dry with paper towels. Slide a butter knife under the membrane on the back of each rack and peel it off cleanly.

  3. Lightly coat both sides of the ribs with olive oil.

2. Season & Slow Roast

  1. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt.

  2. Rub the spice blend evenly over all sides of the ribs.

  3. Wrap each rack tightly in a double layer of foil to lock in moisture. Place on the prepared baking sheet bone-side down and roast in the oven for 2 hours to 2.5 hours, or until the meat is tender and pulling back slightly from the bone ends.

3. Make the Sweet Fire Glaze

  1. While the ribs roast, combine the honey, sriracha, ketchup, soy sauce, apple cider vinegar, Worcestershire sauce, minced garlic, and grated ginger in a saucepan over medium heat.

  2. Bring to a simmer, then reduce heat to low and cook for 6–8 minutes, stirring occasionally, until the glaze thickens.

  3. Whisk in the butter until melted and glossy. Remove from heat.

4. Glaze & Caramelize

  1. Remove the ribs from the oven and carefully unwrap the top of the foil (watch out for hot steam).

  2. Switch your oven to the Broil setting (or turn up heat to 200°C / 400°F).

  3. Generously brush both sides of the ribs with the Sweet Fire Glaze.

  4. Return uncovered to the top oven rack for 5–8 minutes, basting once midway, until the sauce bubbles, darkens, and gets sticky with light charring around the edges.

5. Rest and Serve

  1. Transfer the ribs to a cutting board, tent loosely with foil, and let rest for 10 minutes before slicing between the bones.

  2. Serve hot with remaining warm glaze on the side, freshly sliced spring onions, and toasted sesame seeds.

Chef’s Blog Tips

  • Braai/Grill Method: After oven-roasting in foil, you can finish these on a medium-high grill for 5–10 minutes instead of the oven broiler, brushing with glaze constantly to catch that authentic smokiness.

  • Control the Heat: For mild heat, reduce the sriracha to 2 tablespoons and cayenne to ½ teaspoon. For extra fire, toss in a dash of crushed red chili flakes or habanero hot sauce.
