Here is a quick, delicious recipe for Cheese & Chilli Samoosas—a popular South African-style tea-time snack featuring a melty cheese center balanced with a sharp kick of fresh chilli.

Ingredients

For the Filling

  • 1 ½ cups Mature Cheddar cheese, grated (or a mix of Cheddar & Mozzarella for extra melt)

  • 2 to 3 Green chillies, finely chopped (adjust to taste)

  • ½ small Onion, very finely chopped (optional, adds texture)

  • 2 tbsp Fresh coriander/dhania, finely chopped

  • ½ tsp Red chilli flakes (optional, for extra heat)

  • Pinch of salt & black pepper to taste

For Assembly & Cooking

  • 1 pack Store-bought samoosa pur / patti (samoosa pastry strips)

  • 2 tbsp Cake flour + 2-3 tbsp water (mixed into a smooth paste to seal edges)

  • Vegetable oil for deep frying

Instructions

1. Prepare the Filling

  1. In a mixing bowl, combine the grated cheese, finely chopped green chillies, chopped onion, coriander, red chilli flakes, black pepper, and a light pinch of salt.

  2. Mix well with a spoon until evenly combined. Keep the filling cold so the cheese doesn’t soften too much before wrapping.

2. Assemble the Samoosas

  1. Mix the cake flour and water in a small ramekin to form a sticky glue-like paste.

  2. Take one strip of samoosa patti and fold one corner over diagonally to form a triangle pocket.

  3. Spoon about 1 heaped tablespoon of the cheese mixture into the pocket. Do not overfill, or the cheese will burst out while frying.

  4. Continue folding the strip diagonally, keeping the edges tight and sealed so the melting cheese doesn’t leak out into the hot oil.

  5. Smear a small amount of the flour paste onto the final flap and press firmly to seal the samoosa completely. Repeat for the remaining filling.

3. Fry the Samoosas

  1. Heat oil in a deep pan or wok over medium-high heat.

  2. Fry the samoosas in batches of 4 to 6. Do not overcrowd the pan.

  3. Fry for 2 to 3 minutes, turning occasionally, until golden brown and crispy.

  4. Remove with a slotted spoon and drain on paper towels.

Pro Tips

  • Air Fryer Alternative: Brush both sides with a light coating of oil and air fry at 190°C for 8 to 10 minutes, turning halfway through until crispy and golden.

  • Tightly Sealed Edges: Ensure every corner of the triangle is fully closed with the flour glue; any gaps will allow the melted cheese to escape into the frying oil.
