Ingredients

  • 4 fresh large eggs

  • 2 tbsp unsalted butter, cubed

  • 1 tbsp heavy cream or crème fraîche

  • 1 tbsp fresh chives, finely chopped

  • 2 slices sourdough or thick-cut white bread

  • Flaky sea salt and freshly cracked black pepper, to taste

Instructions

  1. Prep the Bread

    Toast your bread slices until golden brown. Lightly butter them if desired, then set them on serving plates.

  2. Whisk the Eggs

    Crack the eggs into a small bowl and whisk vigorously until the yolks and whites are completely blended and uniform.

  3. Start Low and Slow

    Place a non-stick skillet over low heat. Add the whisked eggs and cubed butter directly into the cold or barely warm skillet.

  4. Cook Gradually

    Stir constantly with a heatproof silicone spatula in small continuous circles, making sure to sweep the bottom and sides of the pan. The butter will melt into the eggs as they warm up, creating a rich emulsion.

  5. Off-and-On Method

    If the pan begins heating up too quickly or forming large firm curds, lift the skillet off the burner for 10–15 seconds while continuing to stir, then return it to the heat. Repeat this process until small, soft curds form and the eggs look glossy and slightly underdone.

  6. Finish and Season

    Remove the pan entirely from the heat. Stir in the heavy cream (or crème fraîche) to instantly stop the cooking process and lock in the silky texture. Season with a pinch of flaky salt and fresh black pepper.

  7. Assemble

    Spoon the creamy scrambled eggs generously over the toasted sourdough. Garnish with chopped fresh chives and serve immediately while hot.
