Ingredients
-
1.1 lbs (500g) quality traditional boerewors spiral
-
4 fresh hot dog buns or soft roll-style baguettes
-
1 tbsp vegetable oil
-
1 large yellow onion, sliced into thin rings
-
1 can (14 oz / 400g) diced tomatoes or tomato tomato paste/chakalaka mix
-
1 tbsp brown sugar
-
1 tbsp red wine vinegar
-
Salt and black pepper to taste
-
Mustard and chutney for serving (optional)
Instructions
-
Make the chakalaka-style relish: Heat oil in a skillet over medium heat. Add the sliced onions and sauté for 6–8 minutes until soft and caramelized.
-
Simmer sauce: Stir in the diced tomatoes, brown sugar, vinegar, salt, and pepper. Lower the heat and simmer uncovered for 10–12 minutes, stirring occasionally until thick and rich.
-
Braai or grill the wors: Heat a braai grid over medium coals (or use a indoor grill pan). Grill the boerewors for 10–12 minutes, turning gently with tongs so the casing doesn’t pierce and spill juice. Cook until browned outside and cooked through.
-
Toast the rolls: Slice the rolls down the top or side without cutting all the way through. Lightly toast them cut-side down on the grill for 1–2 minutes.
-
Assemble: Place a quarter of the cooked boerewors inside each roll. Generously top with the warm tomato-onion relish, along with mustard or Mrs. Ball’s chutney to taste.
