This Creamy Butternut Soup is autumn in a bowl. Roasting the butternut squash and garlic first caramelizes the natural sugars, giving the soup a rich, complex depth of flavor that stovetop boiling simply cannot match. Finished with a touch of cream and warm spices, it makes for an unforgettable starter or a cozy light meal.

Ingredients
For the Roast:
-
1 medium-sized butternut squash (about 1.5 kg / 3 lbs), peeled, seeded, and cubed
-
1 whole head of garlic (top sliced off to expose the cloves)
-
2 tablespoons olive oil
-
1 tablespoon butter (melted)
-
Salt and freshly cracked black pepper, to taste
For the Soup Base:
-
1 medium yellow onion, chopped
-
2 stalks celery, chopped
-
3 cups (750 ml) vegetable stock or low-sodium chicken stock
-
½ teaspoon ground nutmeg
-
½ teaspoon ground cinnamon (optional, adds a subtle warmth)
-
½ cup (125 ml) heavy cream (or full-fat coconut milk for a dairy-free alternative)
-
1 tablespoon maple syrup or honey (optional, to enhance sweetness if needed)
-
Fresh thyme leaves and toasted pumpkin seeds (pepitas) for garnish
Instructions
Step 1: Roast the Vegetables
-
Preheat your oven to 200°C (400°F) and line a large baking sheet with parchment paper.
-
Place the cubed butternut squash on the baking sheet. Drizzle with 1 tablespoon of olive oil, melted butter, salt, and pepper, tossing until evenly coated.
-
Place the whole head of garlic (with the top sliced off) on a small square of foil, drizzle with the remaining olive oil, wrap it loosely, and set it on the baking sheet alongside the squash.
-
Roast in the oven for 35 to 40 minutes, tossing the squash halfway through, until the cubes are fork-tender and lightly caramelized on the edges.
Step 2: Sauté the Aromatics
-
While the squash is roasting, heat a large Dutch oven or heavy-bottomed soup pot over medium heat.
-
Add a drizzle of olive oil, then add the chopped onion and celery. Sauté for 5 to 7 minutes until softened and translucent, being careful not to let them brown too much.
Step 3: Blend and Simmer
-
Add the roasted butternut squash to the pot.
-
Squeeze the softened roasted garlic cloves directly out of their skins into the pot.
-
Pour in the vegetable stock, then stir in the ground nutmeg and cinnamon.
-
Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 10 minutes to allow the flavors to meld together.
Step 4: Purée Until Smooth
-
Remove the pot from the heat.
-
Using an immersion (stick) blender, blend the soup directly in the pot until completely smooth and velvety. (Alternatively, transfer the soup in batches to a countertop blender, making sure to vent the lid slightly to let steam escape).
Step 5: Finish and Serve
-
Stir in the heavy cream and maple syrup (if using) until warmed through. Taste the soup and adjust salt and pepper as needed.
-
Ladle into warm bowls, and garnish with a drizzle of cream, fresh thyme leaves, and a handful of toasted pumpkin seeds for crunch.
Chef’s Tips for Blog Success
-
Make it Vegan: Swap the heavy cream for full-fat coconut milk or cashew cream, and use olive oil instead of butter.
-
Storage: This soup stores wonderfully! Keep it in an airtight container in the refrigerator for up to 4 days, or freeze it (without the cream) for up to 3 months. Stir the cream in after thawing and reheating.
