Instructions
1. Cook the Prawns
-
Pat the prawns completely dry with paper towels and season lightly with salt and pepper.
-
Heat a skillet over medium-high heat and add the oil.
-
Add the minced garlic and prawns, sautéing for about 2 to 3 minutes per side until they turn pink, opaque, and cooked through.
-
Remove from heat and set aside to cool slightly.
2. Prepare the Dressing
-
In a small bowl or jar, whisk together the soy sauce, rice vinegar, sesame oil, honey (or brown sugar), grated ginger, and sliced red chili until well combined.
3. Assemble the Salad
-
In a large mixing bowl, combine the sliced cabbage, shredded carrots, cucumber slices, cooked edamame, chopped cilantro, and mint.
-
Add the cooked prawns to the bowl.
-
Pour the dressing evenly over the salad ingredients and toss gently to combine and coat everything thoroughly.
4. Garnish and Serve
-
Transfer the salad to a serving platter or individual bowls.
-
Sprinkle the toasted sesame seeds and crushed peanuts (if using) over the top for an extra layer of texture and flavor.
-
Serve immediately and enjoy fresh!
Blogger’s Tip
-
Make-Ahead Note: If you are prepping this in advance, keep the dressing separate until just before serving so the vegetables retain their crisp crunch.
