Prep & Cooking Details

  • Prep time: 10 minutes

  • Cook time: 15 minutes

  • Servings: 2 portions

Ingredients

For the Beef Mince Filling:

  • 250g lean Halaal beef mince

  • 1 tablespoon vegetable oil or butter

  • 1 small onion, finely diced

  • 1 clove garlic, minced

  • 1 small tomato, finely chopped

  • 1 teaspoon tomato paste

  • ½ teaspoon ground cumin

  • ½ teaspoon ground coriander

  • ¼ teaspoon turmeric powder

  • ½ teaspoon chili powder or paprika (adjust to taste)

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons fresh coriander (cilantro), chopped

For the Omelette:

  • 4 large free-range eggs

  • 2 tablespoons milk or cream

  • 1 tablespoon butter

  • Salt and black pepper, to taste

  • Optional toppings: Shredded cheddar cheese, sliced spring onions, or a drizzle of hot sauce

Instructions

1. Prepare the Beef Mince Filling

  1. Heat the oil or butter in a skillet over medium heat. Add the diced onions and sauté until soft and translucent (about 3–4 minutes).

  2. Stir in the minced garlic and cook for 30 seconds until fragrant.

  3. Add the beef mince, breaking it apart with a wooden spoon. Cook until the meat is browned and cooked through (about 5–6 minutes).

  4. Stir in the ground cumin, coriander, turmeric, chili powder, salt, and pepper.

  5. Add the chopped tomatoes and tomato paste. Reduce heat to low, cover, and let simmer for 5 minutes so the flavors meld.

  6. Remove from heat, stir in the fresh coriander, and set aside while keeping warm.

2. Cook the Omelette

  1. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until light and well combined.

  2. Melt the butter in a non-stick frying pan over medium-low heat, swirling it to coat the bottom and sides evenly.

  3. Pour the egg mixture into the pan. Let it cook undisturbed for 1–2 minutes until the edges begin to set.

  4. Gently push the cooked edges toward the center with a spatula, tilting the pan to let the uncooked runny eggs flow into the gaps.

3. Assemble and Serve

  1. Once the eggs are mostly set on top but still slightly glossy, spoon a generous portion of the warm spiced beef mince down the center of the omelette.

  2. Sprinkle optional cheese over the filling if desired.

  3. Carefully fold the edges of the omelette over the filling to enclose it, or fold it gently in half.

  4. Slide onto a warm plate, garnish with extra fresh coriander, and serve immediately.

  • Serving suggestion: Pair with buttered toast, sliced avocado, or a fresh side salad.
