A refreshing, tropical dessert that combines caramelised sweet pineapple, a lush cream layer, and a golden, crunchy toasted coconut topping. It’s light, simple to assemble, and packed with warm island flavors.

Prep time: 15 minutes

Cook time: 10 minutes

Servings: 4

Ingredients
For the Caramelised Pineapple:
3 cups fresh pineapple, diced into small bite-sized pieces

2 tbsp brown sugar (or coconut sugar)

1 tbsp unsalted butter

½ tsp ground cinnamon

1 tsp fresh lime juice

For the Cream Base:
1 cup heavy whipping cream (chilled)

½ cup Greek yogurt or mascarpone cheese

2 tbsp powdered sugar

1 tsp pure vanilla extract

For the Coconut Crisp Topping:
½ cup unsweetened shredded coconut or coconut flakes

⅓ cup crushed digestive biscuits, graham crackers, or shortbread

2 tbsp toasted sliced almonds (optional)

Instructions
Caramelise the Pineapple:

In a skillet over medium heat, melt the butter. Add the diced pineapple, brown sugar, and cinnamon. Sauté for 6–8 minutes, stirring occasionally, until the pineapple softens and the sugar forms a light amber glaze. Stir in the lime juice, remove from heat, and let cool completely.

Toast the Topping:

In a dry skillet over low heat, gently toast the shredded coconut and crushed biscuits for 2–3 minutes until lightly golden and aromatic. Stir constantly to avoid burning. Remove from heat and mix in the toasted almonds if using.

Whip the Cream:

In a chilled mixing bowl, combine the heavy whipping cream, Greek yogurt (or mascarpone), powdered sugar, and vanilla extract. Whip with a hand mixer or whisk until medium peaks form.

Assemble the Parfaits:

In individual glass cups or dessert bowls, layer the ingredients in the following order:

A spoon of the caramelised pineapple and its syrup.

A layer of the whipped cream mixture.

A sprinkling of the toasted coconut crisp.

Repeat the layers once more, finishing with a generous layer of coconut crisp on top.

Serve:

Garnish with a fresh mint leaf or a slice of fresh pineapple. Serve immediately for maximum crunch, or chill in the fridge for up to 2 hours before serving.
