4 boneless, skinless chicken breasts (sliced horizontally into thin cutlets)

3 tbsp all-purpose flour

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil (or oil from the sun-dried tomato jar for extra flavor)
Tuscan Sauce

1 tbsp unsalted butter
-
1 small yellow onion, finely diced

4 cloves garlic, minced

½ cup sun-dried tomatoes (drained and julienned)

⅓ cup dry white wine (optional; substitute with chicken broth)

½ cup low-sodium chicken broth
-
1 cup heavy cream
-
½ cup freshly grated Parmesan cheese

2 cups fresh baby spinach
Instructions

Season & Dredge: In a small bowl, mix the flour, Italian seasoning, salt, and pepper. Lightly dredge each chicken cutlet in the mixture, shaking off any excess.

Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3–5 minutes per side until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Transfer the chicken to a plate and set aside.

Sauté the Aromatics: Lower the heat to medium and add butter to the same skillet. Add the diced onion and sauté for 2–3 minutes until softened. Stir in the minced garlic and sun-dried tomatoes, cooking for another minute until fragrant.

Deglaze: Pour in the white wine (or extra chicken broth), scraping up any browned bits stuck to the bottom of the pan. Let it simmer for 1–2 minutes until slightly reduced.

Build the Sauce: Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer, then reduce heat to low. Stir in the grated Parmesan cheese until completely melted and smooth.

Wilt Spinach & Combine: Add the baby spinach to the skillet and stir gently for 1–2 minutes until just wilted.

Simmer & Serve: Return the seared chicken cutlets (and any accumulated juices) to the skillet. Spoon the creamy sauce over the chicken and let it simmer for 2–3 minutes to warm through. Serve warm over pasta, mashed potatoes, or alongside crusty artisan bread.
