Shish Kebab Quinoa Wrap with Hummus

Ingredients
Beef or Lamb Kebabs:
1 lb (450g) ground beef or lamb
2 cloves garlic, minced
1 tsp ground cumin
1 tsp ground coriander
½ tsp smoked paprika
Salt and black pepper to taste
1 tbsp olive oil
Quinoa Wraps & Filling:
4 large quinoa tortillas/wraps
1 cup cooked quinoa (seasoned with lemon juice and salt)
½ cup store-bought or homemade hummus
1 cup diced cucumbers and tomatoes
½ small red onion, thinly sliced
Fresh mint or parsley for garnish
Instructions
Make the Kebabs: In a bowl, mix ground meat with minced garlic, cumin, coriander, paprika, salt, and pepper. Shape into 8 oblong skewer-style patties.
Cook: Heat olive oil in a skillet over medium-high heat. Sear kebabs for 3–4 minutes per side until browned and fully cooked through.
Assemble the Wraps: Lay each quinoa wrap flat and spread a generous layer of hummus down the center.
Layer: Add a spoonful of cooked quinoa, top with two cooked kebabs, diced cucumber, tomatoes, red onion, and fresh herbs.
Roll and Serve: Fold in the sides, roll tightly, slice in half, and serve warm.
