Ingredients

  • 500g large prawns (peeled and deveined, tails left on)

  • 4 tbsp unsalted butter

  • 2 tbsp olive oil

  • 4 cloves garlic, finely minced

  • 1/4 tsp red pepper flakes

  • 2 tbsp fresh lemon juice

  • 2 tbsp fresh parsley, chopped

  • Salt and freshly cracked black pepper to taste

Instructions

  1. Prep the Prawns: Pat the prawns dry with paper towels and season with salt and pepper.

  2. Sear: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the prawns in a single layer and cook for 1 to 2 minutes per side until pink and cooked through. Remove prawns from the skillet and set aside.

  3. Make the Sauce: Lower heat to medium. Add the remaining 3 tablespoons of butter, minced garlic, and red pepper flakes to the pan. Sauté for about 1 minute until fragrant.

  4. Combine: Stir in the fresh lemon juice, then return the prawns to the skillet. Toss to coat them thoroughly in the garlic butter.
