Marinate the chicken<\/h3>\n<p data-start=\"1156\" data-end=\"1268\">Combine the yogurt, ginger-garlic paste, spices, lemon, mint and coriander. Add the chicken and coat thoroughly.<\/p>\n<p data-start=\"1270\" data-end=\"1343\">Cover and refrigerate for <strong data-start=\"1296\" data-end=\"1316\">at least 2 hours<\/strong>. Overnight is even better.<\/p>\n<h3 data-section-id=\"3rky4g\" data-start=\"1345\" data-end=\"1370\">2. Make crispy onions<\/h3>\n<p data-start=\"1372\" data-end=\"1479\">Heat the oil and 4 tablespoons of ghee over medium heat. Fry the sliced onions until <strong data-start=\"1457\" data-end=\"1478\">deep golden brown<\/strong>.<\/p>\n<p data-start=\"1481\" data-end=\"1572\">Don&#8217;t take them all the way to dark brown in the pan\u2014they continue darkening after removal.<\/p>\n<p data-start=\"1574\" data-end=\"1679\">Remove roughly half and drain on paper towel. These crispy onions (<em data-start=\"1641\" data-end=\"1650\">birista<\/em>) will go between the layers.<\/p>\n<h3 data-section-id=\"1ekvjgr\" data-start=\"1681\" data-end=\"1704\">3. Cook the chicken<\/h3>\n<p data-start=\"1706\" data-end=\"1831\">To the remaining onions and fat, add the green chillies and tomatoes. Cook for about <strong data-start=\"1791\" data-end=\"1804\">5 minutes<\/strong> until the tomatoes soften.<\/p>\n<p data-start=\"1833\" data-end=\"1859\">Add the marinated chicken.<\/p>\n<p data-start=\"1861\" data-end=\"1970\">Cook over medium-high heat for about <strong data-start=\"1898\" data-end=\"1911\">8 minutes<\/strong>, then reduce to medium and cook another <strong data-start=\"1952\" data-end=\"1969\">10\u201312 minutes<\/strong>.<\/p>\n<p data-start=\"1972\" data-end=\"2114\">You want the chicken <strong data-start=\"1993\" data-end=\"2013\">partially cooked<\/strong> with a fairly thick gravy. If there&#8217;s lots of liquid, cook uncovered for a few minutes to reduce it.<\/p>\n<h3 data-section-id=\"ft8a91\" data-start=\"2116\" data-end=\"2142\">4. Prepare the basmati<\/h3>\n<p data-start=\"2144\" data-end=\"2247\">Wash the rice several times until the water is mostly clear, then soak it for <strong data-start=\"2222\" data-end=\"2236\">30 minutes<\/strong> and drain.<\/p>\n<p data-start=\"2249\" data-end=\"2358\">Bring a large pot of water to a rolling boil. Add the salt, bay leaves, cardamom, cloves, cinnamon and cumin.<\/p>\n<p data-start=\"2360\" data-end=\"2468\">Add the rice and boil until it&#8217;s about <strong data-start=\"2399\" data-end=\"2413\">70% cooked<\/strong>, usually around <strong data-start=\"2430\" data-end=\"2445\">5\u20137 minutes<\/strong> depending on the rice.<\/p>\n<p data-start=\"2470\" data-end=\"2562\">Test a grain: the outside should be soft but there should still be a noticeable firm centre.<\/p>\n<p data-start=\"2564\" data-end=\"2676\"><strong data-start=\"2564\" data-end=\"2586\">Drain immediately.<\/strong> This step is important\u2014fully cooked rice at this stage usually means mushy biryani later.<\/p>\n<h3 data-section-id=\"znhw75\" data-start=\"2678\" data-end=\"2702\">5. Layer the biryani<\/h3>\n<p data-start=\"2704\" data-end=\"2759\">Keep the chicken and its gravy in a heavy-bottomed pot.<\/p>\n<p data-start=\"2761\" data-end=\"2803\">Spread <strong data-start=\"2768\" data-end=\"2785\">half the rice<\/strong> over the chicken.<\/p>\n<p data-start=\"2805\" data-end=\"2830\">Scatter over half of the:<\/p>\n<ul data-start=\"2831\" data-end=\"2865\">\n<li data-section-id=\"1llauts\" data-start=\"2831\" data-end=\"2846\">crispy onions<\/li>\n<li data-section-id=\"1j36s0m\" data-start=\"2847\" data-end=\"2853\">mint<\/li>\n<li data-section-id=\"ka4vc3\" data-start=\"2854\" data-end=\"2865\">coriander<\/li>\n<\/ul>\n<p data-start=\"2867\" data-end=\"2901\">Add the remaining rice and repeat.<\/p>\n<p data-start=\"2903\" data-end=\"3004\">Warm the milk and soak the saffron in it for about 5 minutes. Drizzle the saffron milk over the rice.<\/p>\n<p data-start=\"3006\" data-end=\"3090\">Sprinkle over \u00bd teaspoon garam masala and drizzle with <strong data-start=\"3061\" data-end=\"3089\">1 tablespoon melted ghee<\/strong>.<\/p>\n<p data-start=\"3092\" data-end=\"3114\">Don&#8217;t stir the layers.<\/p>\n<h3 data-section-id=\"9u71t6\" data-start=\"3116\" data-end=\"3131\">6. Dum cook<\/h3>\n<p data-start=\"3133\" data-end=\"3243\">Cover the pot <strong data-start=\"3147\" data-end=\"3163\">very tightly<\/strong> with a lid. You can put a sheet of foil beneath the lid to help trap the steam.<\/p>\n<p data-start=\"3245\" data-end=\"3328\">Cook:<br \/>\n<strong data-start=\"3251\" data-end=\"3328\">5 minutes over medium heat \u2192 20\u201325 minutes over the lowest possible heat.<\/strong><\/p>\n<p data-start=\"3330\" data-end=\"3436\">If your pot has a thin base, put a heavy frying pan or <em data-start=\"3385\" data-end=\"3391\">tawa<\/em> underneath it so the chicken doesn&#8217;t scorch.<\/p>\n<p data-start=\"3438\" data-end=\"3507\">Turn off the heat and <strong data-start=\"3460\" data-end=\"3506\">leave it covered for another 10\u201315 minutes<\/strong>.<\/p>\n<h3 data-section-id=\"m95huw\" data-start=\"3509\" data-end=\"3521\">7. Serve<\/h3>\n<p data-start=\"3523\" data-end=\"3722\">Open the lid and gently lift the biryani <strong data-start=\"3564\" data-end=\"3590\">from the bottom upward<\/strong> rather than vigorously mixing it. You want some white, saffron-yellow and masala-coated grains rather than uniformly coloured rice.<\/p>\n<p data-start=\"3724\" data-end=\"3808\">Serve immediately with <strong data-start=\"3747\" data-end=\"3765\">cucumber raita<\/strong>, lemon wedges and extra coriander or mint.<\/p>\n<h3 data-section-id=\"b1d19n\" data-start=\"3810\" data-end=\"3859\">Three things that make the biggest difference<\/h3>\n<p data-start=\"3861\" data-end=\"4017\">Use <strong data-start=\"3865\" data-end=\"3881\">aged basmati<\/strong> if you can find it; it produces longer, more separate grains. Bone-in chicken also gives substantially better flavour than breast meat.<\/p>\n<p class=\"\" data-start=\"4019\" data-end=\"4196\">Most importantly, don&#8217;t overcook the rice before layering. It&#8217;s supposed to look slightly underdone when you drain it\u2014the trapped steam finishes cooking it during the dum stage.<\/p>\n<p data-start=\"4198\" data-end=\"4337\" data-is-last-node=\"\" data-is-only-node=\"\">And don&#8217;t skimp on the <strong data-start=\"4221\" data-end=\"4258\">fried onions, fresh mint and ghee<\/strong>.
